The Sylvaner grape variety is first mentioned in 1665 when it was introduced to the Cistercian Abbey of Ebrach in Germany. According to DNA tests, it is derived from a natural cross between the Savagnin grape variety and the Österreichisch Weiss grape variety, which occurred more than 500 years ago. Sylvaner grows mainly in the Eisack Valley, but is also found in Germany, France and Switzerland and in smaller quantities in Eastern European countries.

Maceration for 8-10 hours and fermentation in steel. Aging for 6 months of 80% of the wine in steel, 20% aging in oak barrels on fine lees.
