The Vitovska grape variety grows exclusively in Friuli and practically only in the Karst area. The name probably comes from "vitez," a Slovenian word meaning "wine of the knights," or the name is thought to derive from the Slovenian town of Vitovlje. The grape variety has always been little considered, but since 1960 some growers have begun to recover it, and in 1996 it was legally recognized as a cultivar.

Spontaneous fermentation with maceration on the skins, without temperature control, in open wooden vats with multiple daily punching-downs. Conducting malolactic fermentation in large oak barrels. Aging in medium and large Slavonian oak barrels for 2 years. No clarification or filtration.
