Passum represents the rediscovery of the drying of red wines. The name recalls some famous wines of antiquity obtained by over-ripening or light drying of grapes. Carefully selected bunches of Barbera grapes are harvested and then placed in special boxes in air-conditioned rooms where the drying process takes place, the duration of which varies depending on the vintage.

Mid-October

Withering in crates in conditioned rooms. Fermentation in stainless steel at a controlled temperature of about 25°C with frequent pumping over and maceration for 15-18 days. Aging partly in French oak barriques and partly in traditional medium-capacity barrels for about 1 year, then 6 months in bottle.
