The Vin Santo di Montepulciano appellation is included entirely in the municipality of Montepulciano, in the province of Siena, on hilly terrain with altitudes ranging from 250 to 600 meters on mainly clay and sandy soils. The climate is Mediterranean, characterized by hot and dry summers, while rains are more frequent and abundant in October and November. Wine production in this area is first documented in 789 by some deeds of sale. A document from 1350 established the first clauses for the trade and export of Montepulciano wine, and in the following centuries viticulture continued to be the main crop in the area. Due to the great importance of wine production, there are cellars in the basement of the stately palaces of the city of Montepulciano, cellars partially still used today for aging wine. Vin Santo di Montepulciano was awarded DOC status in 1996 and also includes the production of the "occhio di pernice" type, which is also made using Sangiovese-based black grapes.
