Sassocarlo is a wine made from Trebbiano and Malvasia del Chianti grapes harvested in surmaturation from old vines grown using the biodynamic method. No interventions are made on the vines for cultivation, respecting the land and keeping close ties with traditions.
Very intense straw yellow. Broad and complex, ripe fruit and light roasted notes. Full-bodied, fat and soft, with a very long persistence.

Light maceration at controlled temperature, spontaneous fermentation in cement vats and malolactic in 350l Allier oak tonneaux. Maturation in the same tonneaux on fine lees for 12-18 months, then at least 6 months in bottle. No clarification or filtration.
