Fattoria di Bacchereto's Vin Santo di Carmignano is a raisin wine made from Trebbiano Toscano and Malvasia del Chianti grapes grown biodynamically on a small vineyard of about an acre and a half on clay-limestone soil. After drying the clusters on reed mats in well-ventilated rooms for three to four months, the grapes are lightly pressed, and the resulting must ferments naturally and repeatedly with indigenous yeasts in chestnut barrels for four to five months. Aging takes place in the same containers, which can last from 5 to 10 years before bottling. Bright amber in color, the wine offers a complex bouquet of honey, caramel, chestnuts, dried fruits, figs and apricots. In the mouth, the velvety sweetness is balanced by excellent freshness. Traditionally paired with Cantucci di Prato, it can also be enjoyed on its own as a meditation wine.

Drying on cane stoie in an aerated room for 3-4 months. Slow spontaneous fermentation several times in used chestnut barrels. Aging for at least 5 years in the same containers.
