For the production of Fiore wine only Vernaccia San Gimignano grapes are used, the clusters are selected and harvested by hand and the whole berries undergo a natural pressing, without the use of machinery, the flower must then refines in contact with the fine lees. The vineyards are located in Montenidoli, near San Gimignano, on limestone soils and are cultivated organically without the use of herbicides or chemicals.

Per la produzione del vino Fiore vengono utilizzate solamente le uve di Vernaccia San Gimignano, i grappoli vengono selezionai e raccolti manualmente e gli acini interi subiscono una pressatura naturale, senza l'utilizzo di macchinari, il mosto fiore poi affina a contato con le fecce fini.

Tradizionale is made with Vernaccia di San Gimignano grapes from vineyards planted on limestone soil rich in marine sediment at altitudes between 250 and 350 meters. The wine's name refers to the characteristic maceration on the skins of the must, a technique usually used for the production of red wines, and according to tradition it could only be drunk when the summer had passed.

The Tradizionale is made with Vernaccia di San Gimignano grapes from vineyards grown on limestone soil rich in marine sediment at altitudes between 250 and 350 meters.
