Girolamo Russo winery's Etna Bianco "Nerina" is made from Carricante and other native grapes grown on the northern slope of Mount Etna, on mineral-rich volcanic soil that lies about 700 meters above sea level. Produced entirely organically, this wine is fresh and saline.

Fermentation of 30% of the grapes in used tonneaux, 70% in steel at a temperature of 12/15°C for about 10 days on native yeasts, maceration on the skins for 24 hours. Aged partly in tonneaux and partly in steel for 6 months, then 6 months in bottle.
