Ridolfi's Mercatale wine is a Riserva produced exclusively in the best years, using a careful selection of the best grapes. The vineyards are cultivated according to organic farming principles, employing techniques such as sexual confusion to prevent the moth, the use of organic humus, and sowing and green manure to improve the soil structure and organic component. Located on the north-eastern slope of the Montalcino hill, at an altitude of 300 metres, the soils are of medium texture, rich in clay, marine fossils and, in the highest part, alberese. The Ridolfi wine project, started in 2011 by the Veneto entrepreneur Giuseppe Valter Peretti, is characterised by a style that combines classicism with a modern approach. Mercatale wine exploits the full potential of the vineyards in the Mercatali area, located in the north-east quadrant of the Montalcino appellation, to offer a high quality product that reflects the richness of the local terroir.

Fermentation and maceration lasting 60 days at a controlled temperature of 26°C, in steel tanks, with frequent pumping over. Aged for 55 months in large 35 hl Slavonian oak barrels, then in bottle for at least 12 months.
