The Vin Santo di Carmignano appellation is located within the Montalbano range, which runs from Serravalle Pistoiese to the Arno River, south of Artimino. The soils are very well drained and, depending on the area, composed of sandstone or clays and marls, have excellent exposure and cool ventilation that allow the heat to be mitigated on summer nights. Altitudes are very limited, reaching a maximum of 600 meters. The Carmignano area was known for its wines as early as 1300, and over the centuries several chroniclers wrote about the quality of the wine. In 1716 the Grand Duke of Tuscany Cosimo III dei Medici issued a proclamation that made it possible to demarcate the boundaries of the Carmignano wine production area, an area of particular importance for the production of Vin Santo.

Early September

Withering of grapes until February following the harvest. Fermentation in 100-carat chestnut, cherry and oak barrels. The kegs are placed under the roof and fermentation takes place cold during the winter months. Aging in the same caratelli for 6 years followed by at least 3 months in bottle.
