Le Chiusure is the winery's signature wine made from Erbaluce grapes grown in Piverone in the province of Turin. The grapes are not dried and after harvesting are cold macerated and then aged in barrels in contact with the fine lees. The name Erbaluce originates from a legend, which tells that the fairy Albaluce blessed the inhabitants of Caluso by giving them Erbaluce. It is a variety that was already known in the 17th century and was called Albaluce because of the pale yellow-green color reminiscent of the color of light when the sun rises. It is also called in Piedmontese dialect "Bian Roustì " and "Uva Rustìa," referring to the amber pink color of the berries when ripe, which makes them look roasted. Erbaluce is characterized by a medium-sized cluster with an elongated, cylindrical shape, medium-large round berries and thin skin. It is a variety with very low and irregular productivity due to susceptibility to common vine diseases and low fertility. It is grown by maintaining a thick layer of leaves to protect the clusters from hail, which can easily occur in areas of Piedmont where Erbaluce grows.

Cryomaceration for 30 hours. Fermentation and aging in steel for 4 months, then another 6 months in barrel on fine lees.
