'Tognano' Fiano di Avellino Riserva DocgRocca del Principe
"Tognano" is the winery's cru, made from Fiano di Avellino in the Contrada Tognano in the village of Arianiello. Renaissance documents mention Contrada Tognano as one of the best for Fiano production. The vines were grafted onto 100-year-old Fiano clone plants, grown on clay and sandy soils at an altitude of 500 meters in a dry, breezy climate.
Yellow with orange highlights. Yellow peach, chalk, flint, notes of toasted hazelnuts, flowers. Savory, persistent.
Calcareous clayey at depth, silty and sandy with volcanic ash at the surface
3000 strains per hectare
Fermentation in stainless steel at a temperature of 12°C for 40 days. Aging in steel for 12 months on fine lees, then 12 months in bottle.
