Montonico Bianco is a grape variety that grows mainly in central Italy, but is also present in small quantities in Calabria. It is a grape with high productivity and is characterized by very large bunches weighing up to 1kg, and the berries due to their medium to large size are not easy to ripen properly. For the production of Passito Locride, the grapes are left to dry in the sun for 7-10 days and then vinified in steel.
