Colli Aprutini Pecorino is made with only Pecorino grapes, the latest variety acquired by the Emidio Pepe winery. The cultivation process follows the precepts of organic and biodynamic agriculture. The winery also works according to traditional techniques, the grapes are pressed with the feet and fermentation takes place spontaneously in vitrified cement tanks where it ages for about 18 months.

Straw yellow with amber highlights. Chamomile, lime, lily of the valley, medlar, cotton candy, dehydrated apricots, cider, hay and turmeric. Fresh, lively, balanced savoriness.
